This "Iburigakko" (smoked daikon radish pickle) is made from daikon radish grown in our family fields, carefully woven one by one, smoked for three days and three nights over burning logs of nara (Japanese oak) and cherry wood, and then pickled.

We are particular about the pickling ingredients as well, using plenty of rice bran from Odate City, Akita Prefecture, without any artificial colors or preservatives, and pickling it using traditional methods.

The pickling and aging process also takes two months to slowly mature.
