This is "Iburigakko," a flavorful pickled daikon radish made using only daikon radishes grown on our family farm, carefully braided one by one, smoked for three days and three nights using logs from Nara and cherry trees, and then pickled.
We are particular about the pickling ingredients, using plenty of rice bran from Daisen City, Akita Prefecture, without using artificial colors or preservatives, and pickling it using traditional methods.
The pickling and aging process also takes a full two months.
