This "Iburigakko" (smoked daikon pickle) is made by carefully braiding each daikon radish, grown in our family fields for generations, and smoking them for three days and three nights over burning logs of Nara and cherry wood, then pickling them.

We are particular about the pickling ingredients, using plenty of rice bran from Daisen City, Akita Prefecture, without any artificial colors or preservatives, and pickling them using traditional methods.

They are also carefully pickled and aged for two months.
