Not just eels, but fish of the Anguilliformes order, such as pike conger and moray eel, have tiny bones hidden in their flesh. In the case of eel, there are 150 to 200 bones per serving.
Koihei's "boneless grilled eel" is made by manually removing each of these bones, one by one.
We spare no effort in meticulously removing each small bone from our boneless grilled eel, driven by the desire to "reduce the number of children who dislike eel due to tiny bones," and to "allow elderly individuals with weakened chewing ability to continue enjoying delicious grilled eel in good health."
For this reason, we can only produce 20 servings per day. We apologize, but this will be a limited-time sale.
Although this product is very labor-intensive, we sometimes receive handwritten letters from our customers.
*Since all deboning is done manually without the use of chemicals, it may not be possible to remove all tiny bones completely.
