In addition to eel, fish of the Anguilliformes order, such as pike conger and moray eel, have small bones hidden in their flesh. In the case of eel, there are 150-200 bones per serving.
Koihei's "boneless grilled eel" is made by manually removing each and every one of these bones.
The boneless grilled eel is created with the sole purpose of "reducing the number of children who dislike eel due to small bones" and "allowing elderly people with weakened chewing abilities to continue enjoying delicious grilled eel in good health." We spare no effort in meticulously removing each and every small bone.
Therefore, we can only produce 20 servings per day. We apologize, but this is a limited-time offer.
This is a very labor-intensive product, but it's also a product for which we sometimes receive handwritten letters from customers.
*Since all deboning is done manually without the use of chemicals, it may not be possible to completely remove every small bone.
